The trick is a screaming-hot cast iron and thin loose balls of 80/20 chuck smashed once and left alone until the crust forms.

Ingredients

  • 1 lb ground chuck (80/20)
  • 4 slices American cheese
  • 2 brioche buns, toasted
  • Butter lettuce, dill pickles
  • Special sauce: mayo, ketchup, mustard, relish
  • Kosher salt, black pepper

Directions

    Form 4 loose 2-oz balls. Don't compact them.

    Heat cast iron until smoking. Add balls, smash flat with a spatula.

    Season, cook 2 minutes until crust forms, flip, top with cheese.

    Stack two patties per bun with sauce, lettuce, and pickles.
