Ingredients
- 1 lb bucatini or spaghetti
- 2 boneless chicken breasts, sliced
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1 cup sundried tomatoes in oil
- 1 1/2 cups heavy cream
- 1 cup grated parmesan
- 3 cups baby spinach
- Salt, pepper, red pepper flakes
Directions

Cook pasta in salted water until al dente. Reserve 1 cup pasta water, then drain.

Sear seasoned chicken in olive oil until golden, 6–7 minutes. Remove.

In the same pan, cook garlic and sundried tomatoes 1 minute.

Pour in cream and parmesan; simmer until thickened.

Return chicken, add spinach and pasta, toss with pasta water to loosen. Serve hot.
