Creamy Tuscan Chicken Pasta

Silky parmesan cream sauce clings to every strand of bucatini while golden-seared chicken, jammy sundried tomatoes, and wilted baby spinach round it out. Ready in half an hour, indulgent enough for a Saturday.

Ingredients

  • 1 lb bucatini or spaghetti
  • 2 boneless chicken breasts, sliced
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup sundried tomatoes in oil
  • 1 1/2 cups heavy cream
  • 1 cup grated parmesan
  • 3 cups baby spinach
  • Salt, pepper, red pepper flakes

Directions

    Cook pasta in salted water until al dente. Reserve 1 cup pasta water, then drain.

    Sear seasoned chicken in olive oil until golden, 6–7 minutes. Remove.

    In the same pan, cook garlic and sundried tomatoes 1 minute.

    Pour in cream and parmesan; simmer until thickened.

    Return chicken, add spinach and pasta, toss with pasta water to loosen. Serve hot.
